Guillaume Galliot
Guillaume Galliot is a Frenchman with a deep passion for the terroir of Asia. From a young age, he demonstrated an interest and talent for cooking. He once worked at the renowned three-Michelin-star restaurant Jardin des Sens in France.
Guillaume firmly believes that even the most ordinary ingredients can reveal extraordinary qualities. With over 20 years of experience in Asia’s culinary scene, Guillaume’s career has taken him to Singapore, Beijing, Macau, Hong Kong, and Bangkok, where he has gained extensive experience as a Michelin-starred chef. His mastery of French culinary techniques is exceptional, and he seamlessly integrates the flavors of local ingredients.Years of working and living in this part of the world have made him fall in love with its culture and cuisine, which inspired his decision to open his own restaurant in Shanghai to present his culinary philosophy.

The Operations and Beverage Consultant at 1929 by GG—a seasoned expert in hospitality and beverage service. His career began at the Michelin three-star restaurant Le Cinq at the Four Seasons Hotel George V in Paris, and seven years ago, he made Hong Kong his home. Passionate in his description of 1929 by GG, Victor calls it a “must-visit destination” where historical architecture, French savoir-faire, and modern energy harmoniously converge.
When it comes to wine, Victor follows a simple yet discerning rule: only select bottles he would personally enjoy. With this principle at heart, he has built close partnerships with a number of wineries across France and Europe, enabling 1929 by GG to import distinctive, high-quality wines directly. Sustainability is also one of his key values—every wine selected must align with sustainable practices.
The second-floor Bar Lounge at 1929 by GG was thoughtfully curated by Victor to take guests on an inspired journey along the Spicy Road, evoking the spirit of early 20th-century Asia. Signature cocktails are presented from vintage Louis Vuitton trunks, while refined music and elegant bites elevate the experience into a stylish moment of escape. Among them, his personal favorite—the Negroni—has also become one of the bar’s signatures.

Marco Morandini, the Italian head chef at 1929 by GG, brings a wealth of experience from Michelin-starred restaurants across Asia, including Caprice and Estro in Hong Kong and Il Ristorante Niko Romito in Tokyo. He first met Guillaume at THE Tasting Room in Macau, where their years of collaboration instilled in him a deep understanding of French culinary techniques and Guillaume’s philosophy, viewing him as a key mentor in his career.
Joining 1929 by GG felt natural to Marco, allowing him to continue Guillaume’s vision of blending French cuisine with Asian flavors, respecting each ingredient’s essence while boldly balancing tastes. Marco sees his role as upholding high culinary standards to deliver Guillaume’s exquisite flavors to Shanghai, while also expressing his own culinary personality and creativity through select dishes. His approach centers on authenticity, freshness, and embracing global ingredients to create vibrant, genuine flavors.

Sous Chef
Chef EL grew up in a relative’s restaurant, sparking her passion for cooking. After six years with Michelin-starred Chef Guillaume Galliot at Caprice, she joined 1929 to embrace new challenges and share her vision in Shanghai.
Her menu blends French techniques with Asian influences, featuring seasonal ingredients and local flavors like hairy crab laksa and Shaoxing wine-infused sauces. Specializing in meat, fish, and sauce preparation, Chef EL aims to create dishes that delight guests and achieve Michelin recognition. Committed to exploring local products despite sourcing challenges in Shanghai, Chef EL brings refined techniques and a unique perspective to craft unforgettable dining experiences.

Louis, the sommelier and bar manager at 1929 by GG, began as a bartender and transitioned into the wine world in 2019. He sees both bartending and wine service as crafts that elevate the guest's sensory experience.
