Guillaume Galliot

Guillaume Galliot is a Frenchman with a deep passion for the terroir of Asia. From a young age, he demonstrated an interest and talent for cooking. He once worked at the renowned three-Michelin-star restaurant Jardin des Sens in France.

Guillaume firmly believes that even the most ordinary ingredients can reveal extraordinary qualities. With over 20 years of experience in Asia’s culinary scene, Guillaume’s career has taken him to Singapore, Beijing, Macau, Hong Kong, and Bangkok, where he has gained extensive experience as a Michelin-starred chef. His mastery of French culinary techniques is exceptional, and he seamlessly integrates the flavors of local ingredients.

Years of working and living in this part of the world have made him fall in love with its culture and cuisine, which inspired his decision to open his own restaurant in Shanghai to present his culinary philosophy.

Victor Petiot’s journey began at the Michelin three-star restaurant LE CINQ in Paris. Seven years ago, he moved to Hong Kong, blending French cuisine with Asian culture. Now, he embarks on a new chapter in Shanghai, co-founding 1929 by GG with Chef Guillaume.

Describing Guillaume’s cuisine as intuitive, generous, and precise, Victor carefully curates rare wines from France and Europe to complement each dish. Inspired by the spice routes of the early 20th century, he crafts unique cocktails with exotic flavors at the restaurant’s bar.

Marco Morandini
Chef de Cuisine

Marco Morandini, the Italian head chef at 1929 by GG, brings a wealth of experience from Michelin-starred restaurants across Asia, including Caprice and Estro in Hong Kong and Il Ristorante Niko Romito in Tokyo. He first met Guillaume at THE Tasting Room in Macau, where their years of collaboration instilled in him a deep understanding of French culinary techniques and Guillaume’s philosophy, viewing him as a key mentor in his career.

Joining 1929 by GG felt natural to Marco, allowing him to continue Guillaume’s vision of blending French cuisine with Asian flavors, respecting each ingredient’s essence while boldly balancing tastes. Marco sees his role as upholding high culinary standards to deliver Guillaume’s exquisite flavors to Shanghai, while also expressing his own culinary personality and creativity through select dishes. His approach centers on authenticity, freshness, and embracing global ingredients to create vibrant, genuine flavors.

El Chan
Sous Chef

Chef EL grew up in a relative’s restaurant, sparking her passion for cooking. After six years with Michelin-starred Chef Guillaume Galliot at Caprice, she joined 1929 to embrace new challenges and share her vision in Shanghai.

Her menu blends French techniques with Asian influences, featuring seasonal ingredients and local flavors like hairy crab laksa and Shaoxing wine-infused sauces. Specializing in meat, fish, and sauce preparation, Chef EL aims to create dishes that delight guests and achieve Michelin recognition.

Committed to exploring local products despite sourcing challenges in Shanghai, Chef EL brings refined techniques and a unique perspective to craft unforgettable dining experiences.

Vivian Chen
Restaurant Manager

Restaurant Manager Vivian, with years of experience in Hong Kong’s dining scene, holds a WSET Level 3 certificate and has worked with top talents globally, including Marco, the head chef at 1929 by GG. Her career path, including roles at Michelin-starred ESTRO and Sezanne,

 solidified her commitment to high-end dining. Drawn by the opportunity to collaborate with Guillaume and Victor, she joined 1929 by GG to build an outstanding team and create an inviting atmosphere that keeps guests returning. Confident and prepared for challenges, Vivian believes a passionate, skillful team can deliver exceptional guest experiences.

Louis Li
Head Sommelier & Bar Manager

Louis, the sommelier and bar manager at 1929 by GG, began as a bartender and transitioned into the wine world in 2019. He sees both bartending and wine service as crafts that elevate the guest’s sensory experience. Joining 1929 by GG not only fulfills his passion for wine but allows him to showcase its charm in a refined setting.

Louis aims to provide guests with a personalized wine experience, expertly pairing wines with each dish’s unique flavors. His attention to service details, from glass selection to pouring etiquette, enhances every dining moment. Known for weaving wine stories into his service, he creates a warm, inviting atmosphere where guests feel at ease.
